40ml of Sipsmith gin or vodka
10ml Italicus Rosolio di bergamotto
10ml pineapple juice
10ml lemon juice
10ml lavender and chamomile cordial
40ml Champagne

For the cordial

100ml water
100g castar sugar
25ml Chamomile tea
A handful of fresh Lavender


To make the cordial, heat the water until boiling and add the rest of the ingredients. Stir until the sugar is dissolved then strain and chill. Once cool, add all the ingredients into a cocktail shaker along with cubed ice. Shake well. Strain into a martini glass and top with Champagne. Garnish with an edible flower or lavender.
