The Ivy’s Morning Tonic

Made at The Ivy | Serves 1

1 tbsp fresh lemon juice (roughly ½ lemon)
150ml lightly sparkling water (eg Badoit or San Pellegrino?)
1 pinch of Cayenne pepper

Morning shrub ingredients
500ml organic apple cider vinegar
2 x 6cm pieces of fresh turmeric (available in most big supermarkets and speciality stores. NB turmeric tends to come in smaller pieces, so as it’s being blended, intuition works well here!)
400ml agave nectar


To make the Morning Shrub
Peel the turmeric and discard the skin. Be careful – turmeric stains, so it’s best to wear gloves if you have them. Blend the vinegar and turmeric until smooth. Strain the liquid through a coffee filter or a muslin cloth into a bowl and add the agave nectar. Pour the liquid into a jug, cover it with Clingfilm and refrigerate it for at least an hour. NB the Morning Shrub needs to be used up within a month

To make the Morning Tonic
Pour 25ml of the Morning Shrub into a highball glass. Add the lemon juice and top with the lightly sparkling water. Season it with a pinch of cayenne pepper and serve immediately.
