Strawberry Fields

Here we take the best of British strawberries and macerate them in a combination of sugar, cider vinegar and balsamic vinegar. The result is what’s called a ‘strawberry shrub’ – a sweet and sour elixir that when mixed with Champagne (or Prosecco) creates amost refreshing pre-dinner beverage.

For the strawberry shrub: 

2 x cups strawberries (halved)
1 x cup Aspalls cider vinegar
25ml Balsamic vinegar
1.5 cups sugar
1 x cup calvados


Strawberry Fields ingredients

25ml strawberry shrub
120ml Champagne
3 drops Bob’s Vanilla bitters

 

 

For the strawberry shrub:

Place the strawberries into a jar/ ice cream tub. Add half a cup of sugar and gently muddle. Leave in the fridge over night.

Add the vinegar and leave for a further 2 days. Then strain through a muslin cloth and add the calvados and extra sugar.

Bottle and refrigerate. This will last for months as the vinegar, sugar and alcohol provide excellent preservation.

To make the cocktail:

Pour all of the ingredients into a champagne flute and garnish with an upturned mint head.
